INGREDIENTS

1 x 250g packet SunRice Thai Style Coconut Rice in 90 Seconds
2 tbsp olive oil
2 x 180g firm white fish fillets
¼ cup dukkah spice
Steamed snow peas to serve
Yoghurt Dressing
125g plain yoghurt
1 Lebanese cucumber, diced
1 tsp lemon juice
¼ tsp ground cumin
1 tbsp coriander, chopped

METHOD

Coat the fish in dukkah
Fry fish in oil in a non stick pan over medium heat for 3 minutes each side
Combine yoghurt, cucumber, lemon, cumin and coriander. Set aside
Microwave rice as per pack instructions
Serve meal with side of steamed snowpeas

Serves 2
Cooked in 10 minutes
