Cajun Chicken and Sweet Corn Paella
INGREDIENTS
1 x 450g packet SunRice Roast Flavoured Chicken Rice in 2½ minutes
2 tbsp olive oil
1 red onion, sliced
2 cloves garlic, chopped
1 red capsicum, sliced
500g chicken breast, thin sliced strips
2 tsp Cajun spice
1 tsp smoked paprika
1 cup low salt chicken stock
½ cup crushed tomatoes
150g tin sweet corn kernels, drained
2 tbsp coriander, chopped
Lemon and coriander to garnish
METHOD
Sauté onion, garlic and capsicum in oil over medium heat for 2 minutes
Add the chicken and sauté until brown
Microwave rice as per pack instructions
Stir in rice to pan followed by Cajun spice, paprika, stock, tomatoes and corn
Cook for 2-3 minutes until hot and chicken is cooked
Add chopped coriander, stir through and serve meal with lemon and coriander to garnish
Serves 4
Prepared and cooked in 10 minutes
