Thai Green Chicken Curry on Jasmine Rice
INGREDIENTS
1 x 250g packets SunRice Fragrant Jasmine Rice in 90 Seconds
1 onion, sliced
300g skinless chicken breast, sliced
1 green capsicum, sliced
1 jar Thai green curry paste
400g tin light coconut milk
250ml (1 cup) chicken stock
100g snowpeas, trimmed
1 small bunch coriander, chopped
METHOD
Sauté the onion and chicken in a hot pan for 2 minutes until golden
Add the capsicum, curry paste, coconut milk and stock
Cook for another 2 minutes to heat through
Microwave the rice for 90 seconds as per packet instructions
Add the snow peas and coriander last and cook for another minute
Serve the curry over the hot Jasmine Rice
Serves 2
Prepared and cooked in 10 minutes
