Lamb Cutlets with Roasted Vegetable
Brown Rice
INGREDIENTS
1 x 250g packet SunRice Roasted Vegetable Brown Rice in 90 Seconds
60ml olive oil
1 clove garlic, finely chopped
Pepper & sea salt to taste
1 tsp rosemary, chopped
3 tbsp parsley, chopped
2 tsp grated lemon zest
Juice of 1 lemon
6 lamb cutlets
Cherry Tomato and Feta Salad
125g cherry tomatoes, halved
1 red onion, diced
1 tbsp parsley, chopped
Pinch pepper
30g Persian feta
METHOD
Combine olive oil, garlic, salt, pepper, rosemary, parsley, lemon zest, lemon juice and lamb cutlets in a bowl
Fry lamb cutlets over high heat for about 2 minutes on each side
Combine cherry tomatoes, parsley, red onion and pepper in a bowl and set aside
Microwave rice as per pack instructions
Serve meal with salad and top with feta
