Sausages and Rice with Avocado Salsa
INGREDIENTS
1 x 250g packet SunRice Basmati Rice Mexican Style Rice in 90 Seconds
1 tbsp olive oil
4 lean beef sausages
1 large brown onion, thinly sliced
1 avocado, peeled and chopped
Juice from ½ lime
1 tomato, chopped
1 spring onion, sliced
Salt and pepper to taste
150g steamed green peas
METHOD
Sauté sausages and onion in olive oil over medium heat for 5-8 minutes or until cooked through
Combine avocado, coriander, tomato, lime juice, salt, pepper and spring onion in a bowl, then set aside
Microwave rice as per pack instructions
Serve meal with salsa and steamed green peas
Serves 2
