Vegetable Curry with Basmati Rice
INGREDIENTS
Substitute Tomato rice with 1 x 280g packet SunRice Heat & Serve Basmati Rice in Tray in 2 minutes
1 tbsp olive oil
3 tbsp Thai red curry paste to taste
250ml coconut cream
250ml vegetable stock
400g pumpkin, diced small
1 red capsicum, chopped
200g broccoli, cut into flowerets
150g tin baby sweet corn, drained
400g tin chickpeas, drained
2 tbsp coriander, chopped
Juice from ½ lime
Spring onion to garnish
METHOD
Fry curry paste in oil over medium heat for 1 minute
Add coconut cream and stock followed by pumpkin, capsicum, broccoli, corn and chickpeas. Simmer for 7 minutes
Microwave rice as per pack instructions
Chop coriander and stir through with squeeze of lime, garnish with spring onion and serve meal
Serves 3
Cooked in 10 minutes
